As limited as possible, like I said. Never e-mail from phones, only place my e-mail address book is stored is on my pc - I use a mail client not webmail
so much easier to sync and back up contacts across all your devices via accounts. how do you sync contacts between your devices? where would you keep your contacts on a device without a sim like a tablet?
This is part of the point - I use different devices for different purposes, with different contact sets with or without overlap between them. Why would I want to sync one mahoosive contact list to a device I wouldn't use them on?? Another reason other than the privacy aspect why I don't do as you suggest...........Gettin' There, Wherever There is......
I have a dodgy "i" key, so ignore spelling errors due to "i" issues, ...I blame Apple0 -

that is what contact labels and groups are for"The Holy Writ of Gloucester Rugby Club demands: first, that the forwards shall win the ball; second, that the forwards shall keep the ball; and third, the backs shall buy the beer." - Doug Ibbotson0 -

OK, maybe that suits your situation.
Personally I find the ability to sync between different devices incredibly useful. Even if I have no intention of using one device for a particular application, you never know when an unexpected situation may arise and it would be useful to have the information available. A "mahoosive" contact list takes up very little storage space and can easily be subdivided into groups or whatever. I almost never email from my phone but once in a blue moon an unexpected need arises to perhaps check something in my sent folder. Given that there is almost no overhead in having the facility available why tie you own hands behind your back?0 -
so, dipso and undervalued, are you quite happy for apple/google/whoever to be data mining on all your works stuff? You can't work in an industry where security is paramount...........Gettin' There, Wherever There is......

So, no companies in the world are to use Apple or Google as it's not secure enough.....................OK. So now we know, we can all get back to the dark ages....;)Drinking Rum before 10am makes you

Since there exists an open standard like Carddav, you can use any Carddav server, even your own thanks to Own-/Nextcloud.
And how do you store more than one telephone number per contact on a SIM card, let alone an email address or an actual address?0 -

There are other ways of syncing data if you are unhappy with using Google / Apple etc.
Whilst it is good to be aware of both the pros and cons, it is easy to take those concerns out of all proportion.

Not enough hours in the day to read all terms or worry about what happens to my data. i just look at the pros and cons and decided it makes my life easier to use google to manage my contacts. Interested to know what sort of business would only store contacts on a sim? Are you able to code contact details on a sim?"The Holy Writ of Gloucester Rugby Club demands: first, that the forwards shall win the ball; second, that the forwards shall keep the ball; and third, the backs shall buy the beer." - Doug Ibbotson0
