Most users don't seem to have the same problems with Android or Chrome OS because they don't start out with the same expectation that they will be pretty much like Windows.

I have to say, I find android particularly nauseous tbh, can't do carp with it  and I'm of a similar vintage to you (but started on Sinclair BASIC ;) ) Too many variations between manufacturers of supposedly the same version, options to do stuff in one that's not in another, features enabled/disabled depending on if the vendor got laid last night, etc., etc....

Even the simple operations of block-moving contacts between phone & SIM seems too difficult for most android OSs

Damn right, then when I swap phones I insert the SIM and hey presto ! there are all my contacts.... why would you not have them on the SIM???

...and before you say save them in cloud sync accounts, no, I prefer to have control over my stuff, thanks..... I find it hard to understand how many people give so much faith to corporations handling their info. I know a certain amount is unavoidable, but I prefer to keep it to a minimum.

i am assuming you communicate with your contacts either by voice, text or email so a digital record of your contacts exists somewhere on somebody elses server?

so much easier to sync and back up contacts across all your devices via accounts. how do you sync contacts between your devices? where would you keep your contacts on a device without a sim like a tablet?

Perhaps you should rethink your stance if you believe XP ran on 16 bit machines

I've never understood the need for Classic Shell (I used to work at a place that installed it as standard) - are people really that averse to the win10 start menu? I've always found it easier to use (and find things) compared to the "classic" menu, so I'm genuinely curious...

Personal preference really. I have my computers set up in a very specific way with certain application shortcuts on the desktop, some on the Quick Launch bar on the Taskbar which I reinserted (prefer it to pinning things) and some pinned to the Start Menu.

I don't need the 'Life at a Glance' or 'Most Used' or the other tiles of the Windows 10 start menu. I'm sure there's ways of customising the Windows 10 start menu I haven't looked into, but my needs are already met by my current setup.

Perhaps if you didn't keep changing your sig each time you are called out people might read it....
