I'm another lover of that quote - I feel like I want to write that on the front of my work notebook to keep me in the right frame of mind!
Loving your meal plan too, my husband is such a moaner whenever he feels things get repetitive so it's hard to keep variety while eating reasonably well with meals that don't take a lot of prep or cooking time... jeez. I've taken inspiration from yours though

JoJo, I was thinking earlier it must be more time consuming for people with partners and/or more children. Do you have a slow cooker? I have friends who swear by it - prep the night before, a little bit of sorting in the morning and leave to do its thing until dinner time.
I can have chilli in the evening and stick it in a wrap the next day then have it again a few days later, no problem. For me as long as its good quality, tasty and doesn't take up headspace I am happy. But then the chilli I make makes 6 portions and I am single so no choice either!

I do have a slow cooker, actually, but things I've cooked in that have been a hit or a miss and, you're right, it does involve morning organisation. I'll maybe have a think about how i can use it a bit more often as it'll definitely make a difference.

I have never used one myself so unsure exactly how it works but as only me and DD I am not sure I really need one. I guess I am lucky to not have to negotiate but I do miss having more of an incentive to make more adventurous food...cant have it all

Today I switched energy supplier, will take three weeks to process. I recently had done some research so knew I could save money on my current costs but my energy supplier emailed to say they would be putting up the cost by £74 a year per average customer - its hard to say exactly how this would effect me but I think around £57 a year.
My new supplier is saving me £177.38 on my current direct debit so £235 saved on the coming year due to price increase with current supplier! My direct debit will go down to £59.22 from £74 during winter months and something about a little less in summer months plus they pay 3% on any credit. :T
Another little bundle of cash my future self can put to good use plus another thing ticked off the list.

Don't mind at all, they are called Tonik - they are Green so I don't know if cheaper than all providers but worked out cheaper than the big ones for a friend of mine. They are pretty good from the looks of it but fairly new, let you lock in price for 12 months but leave at any time without penalty. I find that most eco providers have very good customer ethics and as they are usually investing in UK generated green energy it is something for the future generations too. I read somewhere that the UK has the best environment in the whole of Europe for wind powered energy and feel strongly it will drive down prices and make us less dependent on imported energy as well as the obvious benefits for the planet.... jump down from my high horse again
