    Apple amber was my favourite pudding as a child and still is as an adult. My children all love it!! Basically you cook the peeled and chopped apples with butter and sugar until the apples are soft. Taking 3 eggs, separate them and put the yolks in with the apple (which gives it the amber colour). Beat the egg whites and mix in the sugar, making a meringue topping for the apples. Bake until the meringue is ready. Delicious!!

    The birthday celebration was lovely with all but 1 of my children in the same place at the same time!! As time was short, I adapted a cake from Mr T’s by scraping off the icing, replacing it with some vanilla buttercream icing and decorating with blueberries as per the birthday child’s wishes. It worked well…the blueberries balanced out the icing.

    Healthwise I’ve had a bit of a jolt…the crazy hours I’ve worked have caught up a bit with me having very low iron levels. SO has been really sweet and bought every iron rich food he could see, so watercress with the lasagne tonight and cashew nuts as a snack for break times at work.  Hopefully will see improvements, but awaiting an appointment for iron at hospital.

    Sorry to hear about iron levels though. I can highly recommend Floradix for iron - I take a shot most days and can really tell when I’ve not had it for a few days. It’s all natural and the iron is supposed to be easily accessible (just avoid dairy or caffeine for half an hour afterwards so that it’s fully absorbed). Hope you’re feeling better soon.

    I hope the iron levels come back up soon, it must be draining you. Once that's right, you'll be skipping like a spring lamb. :)

    I think considering you've  received a health warning that it's just as well you've dropped your hours at job2. I had low iron in one of my pregnancies and I recall that dried apricots are  also quite high in Iron if that would help as an alternative snack in your bag.

    Glad you had a lovely birthday. 

    My DD also suffers with very low iron to the extent that she’s had to have infusions in hospital. I’d forgotten about Floradix so thank you @themadvix, that might help her.

    Best of luck getting your iron up. I've been there. Not a nice place to be. No wonder you've been feeling worn out. Check your B vit levels too...

    Thank you for the Floradix recommendation. A couple of colleagues have also recommended it. I asked at the hospital and I can start taking it a week after the iron infusions so it will be on the shopping list.

    Had the first infusion yesterday. Apparently my iron levels are so low that I qualify for 2 infusions 😳 so have another next week. My boss at Job 1 has given me a couple of days to recover which I have needed. I woke late today and have slept this afternoon. SO has kept up with cooking iron rich foods!

    Spendless- you are right. I’m thankful that I have cut back on my hours at Job 2. I need to think of  other income streams that I could try, in order to replace Job 2, if at all possible. Dried apricots are in the snack packs!  Thank you  for the tip!

    I did relish the chance to have a slow stroll in the sunshine this morning. Simply bliss to see the sunshine lighting up the leaves remaining on the trees.
