    Sounds like all supplies have decreased:

    Check 'something' hasn't dropped into the header tank - could be a deceased rodent, insulation, generic sludge, any multitude of things blocking the outlet of the tank...

    hot water comes from the cylinder not the header, the header tank should also have a cover on.

    Im putting my money on the washer within the hot side of the tap jamming, I have had the same thing twice on our bathroom hot tap stripping the tap down and replacing the washer will help.
    If it was scale would the cold water not also be affected?

    The main problem is the hot part of the kitchen mixer tap. The hot taps in the bathrooms are not that slow and I think can be discounted from this problem.

    If the header was blocked then all hot taps would be affected.
