  • This recipe needs peeling, but no roasting. It's really yum, the nicest soup I've made. U need to scroll down a bit

    I put mine in the pressure cooker.... then blitz! Can I leave the skin on then?

    Thanks for this everyone - I have 3 of them sitting in my kitchen (grew them this year for the first time). I'm not a big fan of butternut just roasted but I have a mind to try soup, perhaps with some curry paste for some extra flavour. I have loads of red thai curry paste sachets and I think it should work.

    My OH always eats the skin - I roasted it once and he just ate it that way so if he's happy thats all that counts:rotfl:

    Hmm, never tried it with the skin on! Will have to give it a go.

    My OH makes B.nut soup with chicken stock, and adds nutmeg and cinnamon and other more normal seasonings, which compliment it nicely without being overpowering. A bit of cream to serve is yummy too!

    I just blast mine in the microwave to soften it, (cut into manageable lumps), and keep the skin on.....:)
  • i too roast mine with skin on but i found an easier way to peel it is with one of those potato peelers that look a bit like a bic razor ? IYSWIM ....maybe i should try the peeler on me legs now tgheres a thought :rotfl:
    lucky for me i found 2 butternut squashes reduced in my MR T down to 3p each was very happy they make great soup or curry i find cumin complements it well too as does sweet potato if you see them lurking cheap

    I usually take the skin off... (never tried it with skin on!) but I add sweet potato, lots of garlic and a generous helping of root ginger..... really yummy and great if you have a cold!

    Hi, I've made butternut squash soup before and never gave roasting a thought.

    I just chop into chunck and cook in the stock the same as any other roots.

    It looks as if noone is going to bother peeling again, me included, :D But the way I used to do it is cut the squash into inch rounds slices, then just peel around the disc. Hope that makes sense.
