I made some Texas Burgers the other night........
Fry 1 small chopped onion with 1tsp oregano, 1 tsp ground cumin and 1 tsp paprika till softened. Leave to cool. Once cool add to 500g minced beef and 1 tbsp worcester sauce and squish together really well (so you can no longer see any of the "minced" bits of beef and it looks like it's all one). Shape into burgers (either by hand or using a burger press). Cook for 6 minutes each side under a medium grill. Place some lettuce and tomatoes and mayo on the bottom of a toasted bun, put the burger on top, and finish with sliced gherkins and tomato ketchup.

I add either a good slurp of ketchup or wholegrain mustard to mine. Plus I have to agree with what everyone says about not using too lean mince.“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”

Mmmmm homemade burgers! I love my burger press.
I use steak mince from the butcher, or Waitrose Aberdeen Angus mince (not particularly OS, but it's on offer at the moment - 2 x 500gm packs for £3.50) and I add a couple of handfuls of finely chopped onion, a bit of salt and pepper, and a some finely chopped mushrooms. You can't taste the mushrooms at all, but they make the burgers really moist.

Lots of garlic is my contribution to this thread! Egg, finely chopped onion lots of garlic and mince, leave in a bowl during the day in your fridge - just to make sure your fridge gets nice and smelly!0 -
I add a stock cube, soy sauce, tabasco (a little), lea and perrins and ketchup plus 1 egg to mine ! They are scrummy.
It always makes me wonder when macdonalds etc say their burgers are pure beef - if i made mine with beef and nothing else I don't think they would be very nice :rolleyes:0 -

I like a pinch or so of dry Colmans English mustard in mine, and Jamie Oliver recommends coriander seeds, which is nice but the kids find that way too exotic.

I use 2 parts beef (Aberdeen Angus) to 1 part free range pork mince with some finely chopped onion and a dash of japanese soy. Made a huge batch for a recent BBQ and they went down well. Not the cheapest but the best!NSD 0/150
