yes, the mix is great on white fish as well and pork.
and, yes, poet, it is possible to marinate using a dry spice rub, which is what this is.
I was a chef for many years and do know what I'm talking about!0 -
well, we made this tonight- I mixed 10 tbsp of cornflour with about 5 tbsp of the S&P mix I got from the Chinese supermarket (which comprised salt, pepper, chinese 5 spice, garlic powder, msg, ginger) and added about 2 tsp of chilli powder-coated the strips of chicken in egg then in the spicy flour mix and shallow fried them, they were very nice, almost like the takeaway but I thought they were a tad on the salty side so next time I think just 3 tbsp of s&p mix would do it.
DH loved it but then he likes salty things but I never add salt to my food unless I'm having chips so I thought it was a tad too salty.
When the chicken was cooked, we set it aside on kitchen paper and poured the oil away, added a bit more, sauteed an onion, chucked in some wok noodles and some soy sauce then threw the chicken back in at the end just to warm back thru.
I think a few chopped up spring onions and red chillis would have made the noodles more takeaway-ish but we didn't have any.
Hope this helps someone else who is addicted to S&P chicken like me but can't afford takeaway prices any more!
I'm now sipping me cheap bourbon and coke and about to have a bar of choccie- well, it is Saturday!0 -

I prefer it without the batter but I think you can coat it in cornflour to help it crisp up?
I buy the salt n pepper seasoning from a chinese supermarket - it varies but cheapest variety near me is £1.65 for 200g (you only need a couple of tablespoons) upto £2.15 for 250g.
This is how I do it - usually with chicken breast pieces:
Chop an onion and a green pepper
Slice a couple of small cloves of garlic and set to one side.
Chop chicken and fry with the pepper and onion in a little oil ( I use veg oil with a drop of sesame oil in it )
Once the chicken is cooked through and the onion and peppers have softened, add the sliced garlic and sprinkle on the S&P seasoning, along with extra chilli flakes or chopped fresh chilli and fry for 30 seconds or so. Serve ( and try not to eat the whole lot haha!)
Enjoy!!To infinity and beyond - but mostly to Tesco!:D0 -
thanks but would this not make them soft not crispy?we go to a chinese and i always have them and they just crispy and lush hahaha0
