anyone ever made salt and pepper chicken?

our fave takeaway meal is salt and pepper chicken, I need a tried and tested recipe to make it at home, i'd rather have one that you've tried and know is good as I can google for one myself but would rather have a recommended one. I bought some s&p seasoning from my local Chinese supermarket which has salt, pepper, chinese 5 spice, msg and i think chilli in it.

I think you put some in some flour, dip the chicken strips in egg then coat them in the seasoned flour and shallow fry but can someone confirm?

my weakness is a good takeaway S&P chicken, a glass of bourbon and coke and chocolate- I've found a nice bourbon from Asda for 8.99 a 70cl bottle instead of £14 for a bottle of JD, Tesco whole nut milk choccy bars are on offer and cheaper than dairy milk or galaxy, now I just need to crack the takeaway! ;)

  • just mix sea salt crystals, cracked black peppercorns and 5 spice powder together, crush together wiht a pestel + mortar if you have one - or with fingers if you dont' to. sprinkle a little on diced skinless chicken, let sit 30 minutes, then saute. Sprinkle with a little more seasoning after cooking. Or toss in cornflour after marinading and shallow fry, then add more seasoning. You don't need to buy a packet and MSG isn't very good for you.

    i've already bought it and i like the batter that the t/away s&p chicken comes in, we're not going to have it often, just as a treat ;)

    salt & pepper chicken and JD are my faves too. chocolate is also a good thing, but i can't eat it after a chinese :)

    does it have to be cornflour? is it possible to marinate something in a dry mixture?
  • the cornflour would be in it's original dry form. use it as you would flour.
    toss chicken in seasoned cornflour, using the mix of seasoning mentioned above. then shallow fry.
    the cornflour produces a light batter like the japanese tempura batter.

  • i would say so. i eat salt & pepper chicken wings from a certain chinese near me and they're very similar to the chunks of chicken done in the same way.

    ribs done in this way are also excellent. par-boil them and then roast with a mix of that seasoning.
