Leftover chicken and a tin of coconut milk...what now?

I have the feeling I could turn this into a meal but I'm not sure what else I would need. I have storecupboard stuff like spices and rice, chickpeas and fresh veg but no idea what do do. Any ideas would be very welcome x

    Thai or Indian curry. Depends on which spices you have.

    Thai green curry.


    Just need ginger, garlic, lemon grass, coriander and chilli to add to the sauce.
    Fry ginger, garlic, lemon grass and chilli for a short time, add chicken and coconut milk (and veg if you want). Heat through thoroughly, add chopped coriander and serve.


    Mangetout and baby sweetcorn are the ideal veg to add to it, but others will work. Serve with rice or noodles.

  • Chop up an onion, 4 cloves of garlic and a courgette, add to a bowl with the chicken, olive oil, piri piri seasoning, onion and garlic granules and marinade for a few minutes.

    Fry the lot off then add your coconut milk, bring to the boil, thicken to a creamy sauce consistency with 1-2 tbsp cornflour mixed with cold water to form a slurry/loose paste. Simmer for five minutes serve with steamed veg and rice or noodles.

  • Kathryn your Thai curry sounds perfect I have everything in except lemongrass, I will just try it without that. I even have babycorn and mangetout.

    Splishsplash yours sounds yummy too but I don't have a courgette or piri piri so I'm going with the Thai one today. Will make a note of yours though as I will try it.

    Easiest ... if you've got it ... is just some spoons of a curry paste, the milk, the chicken .... and anything else you've got that you can lob in its general direction. Bring to the boil, turn down and simmer until it's evaporated enough .... serve with rice, or chips, or naan bread... or even as a jacket spud topper.

    Depends what you've got and how much effort you want to put in.

    Or, at that point, decide "I don't fancy it now" and cool/freeze it :)

    I thought the same about the thai curry, and I happen to have a tube of lemongrass puree in the fridge, so that's dinner sorted then:rotfl:
