Can anyone help out with a foolproof ginger cake recipe? I have been giving gifts of cakes to friends/family for the past year or so (mainly because I loooovvvveee to bake!) and this week my dad and my nan have put in proper orders (with money!!):beer: to bake for them. My dad however wants a ginger cake as one of the cakes and I haven't ever made one cos I'm not keen on ginger- anyone got a yummy ginger cake recipe they would like to share? I think he wants one of those quite dense ones like jamacian ginger cake. Thanks in advance:j

this is a basic ginger cake that is lovely spread with butter
3oz marg
1 egg
3oz sugar
2tbsps syrup
11/2 tbsps treacle
8oz sr flour
1 heaped tsp ginger and 1 level tsp mixed spice

melt marg, sugar, syrup, treacle, cool add egg and flour, mix well bake in a moderate oven, cant remember how long for as i judge it with a skewer stuck in the middle when i think its done

one i have tasted but not done, got recipe from a friend

boil
1 teacup raisins, 1 teacup water, 1 teacup sugar, 1/2 teacup butter, 1tsp ginger, mixed spice, cinnamon and nutmeg and a pinch of salt, boil 3 mins, cool

add 2 teacups sr flour and 1 egg 180oc for 30-40 mins

I swear by this recipe for Iced Ginger Cake which is so easy to make. There's one maturing wrapped in cling film and tin foil hidden away at the moment for my bfs birthday cake on sat! I flew out with one in my hand luggage for his bday last year and it had to go through the x-ray machine all by itself as it was wrapped in tin foil!!

I don't like ginger cake but I made this one and it's divine, got loads of complements even one from a professional chef. The mix is very sloppy so don't worry
