Ginger Cake Recipe Please

Does anyone happen to have a recipe for ginger cake? Also, could I use fresh ginger?

Made a carrot cake last night and it was delicious. I have always felt sick at the thought of eating cake made with carrots but I had quite a few carrots left and decided to give it a go. The whole family loved it but could you consider it to be a portion of fruit and vegetables?:D

    My family love this recipe,I usually make it in a loaf tin,if you eat the next day all the flavours come out more,

    150g plain flour
    2tsp baking powder
    3tsp ground ginger
    50g butter
    50g light brown sugar
    1 tbsp black treacle
    2 tbsp golden syrup
    175ml milk
    1 tsp bicarbonate of soda
    150g stem ginger
    2 eggs beaten
    2 tbsp ginger syrup,from the jar of stem ginger.

    1) sift flour,baking powder and ground ginger into a large bowl.
    2)cream together butter and sugar until light and fluffy.
    3)put treacle,syrup and milk and bicarb into a saucepan and heat very gently until treacle and syrup have completely melted.
    4)roughly chop 3oz stem ginger,beat into flour with eggs and milk mixture until smooth.
    5)pour mixture into a greased and lined tin.(i use a loaf tin)cook at 325f,160c,gas 3,for 50 mins(might need longer in a loaf tin)until well risen and firm to touch.Turn out and leave to cool on a wire rack.
    6)thinly shred remaining stem ginger.Brush top of cake with ginger syrup.sprinkle over ginger shreds.
  • Alternative recipe - this is a honey cake recipe but you can really taste the ginger. I make this recipe every winter and it vanishes from the box :)

    1 lb honey (equates to 1 jar)
    1 lb flour
    3 eggs - separated
    1 cup sour cream (1 of the double height pots is a cup)
    1/2 cup melted butter (50g)
    1/2 cup sugar
    1 tablespoon baking soda
    2 tablespoons ginger
    2 tablespoons cinnamon
    2 tablespoons allspice

    I haven't made it without the cinnamon & allspice, but i suppose they could be left out.

    Preheated oven at 325F/160C
    Boil honey on low heat, about 10 minutes, cool.
    Mix soda & flour and sour cream
    Cream egg yolks with sugar and add to honey, add seasonings and mix well.
    Add melted butter, sour cream beaten with soda and flour.
    Mix all ingredients well and fold in beaten egg whites.
    Pour batter into baking pan lined with greased paper.
    Bake for about 30-45 minutes - until the fizzing you can hear is slow & quiet
    Cool cake in baking pan.
    Still wish I could buy a TARDIS instead of a house!
