We made parkin at school which is a similar thing, the kind of texture you are after. Make sure you have at least one of the following - black treacle, molasses or that REALLY dark sugar (muscovado?) YUM!Member no.1 of the 'I'm not in a clique' group :rotfl:
I have done reading too!

Made this yesterday, I made double quantity and did 3 x 1b loaf tins.
50gm Black Treacle
50gm Golden Syrup
100gm Marg
100gm Sugar
Warmed together in a pan
175gm Plain Flour
1 teasp Bicarb
1 tabsp Ground Ginger
50gm Chopped Crystallised Ginger (optional, but worth it)
Mixed together in bowl
1 medium Egg beaten
1/4 pt Milk
Mix all ingredients together well to make a batter bake in 2lb loaf tin for 1 hour 180*c.
We have this as a cake, or with extra thick double cream on, or you can have it warm with custard. It's deliciously sticky, and as a pudding a real winter warmer.:D0
