Afraid to Spend So Much Money

After going through the notions of buying a house, I'm afraid to spend money.
A house is the biggest purchase of my life so far, but the difference is, we didn't spend that much money because the mortgage company has. So I don't feel like we've spent that much on a house.
However, I am now looking at a new pan set and knives. Had a couple of recommendations from here for Stellar Pans and Henckels knives. Both seem quite nice but hugely expensive.
I've read the reviews and both seem really great but it still worries me spending so much money on things I could get for less. But I am happy to buy once and buy good... still scary though.
Any thoughts from people who have bought expensive, but are really happy they did so?

Never regretted spending money on pans, knives and dinnerware.
I spends lots of time in the kitchen. I have le Creuset pots and pans and global knives. Well worth the money. You'll not regret it.0 -
Personally i would never spend £149 on a set of pots and pans regardless of the long term 'savings'. I have always bought cheap non stick pans and they last a good number of years. Usually only needing a tighten up on the handle with a screwdriver once a year but then it depends how you treat them/how long you expect them to last and whether your prepared to spend long term/pursue a claim 20 years down the line on a 25 year warranty and whether that company will still exist or honour the guarantee
As said before personally i'd buy cheap/take care/repair and replace when absolutely necessary and start taking seriously the lifetime commitment to repaying what is a huge sum of money being loaned to me! but then each to their ownEven a stopped clock tells the right time twice a day, and for once I'm inclined to believe Withnail is right. We are indeed drifting into the arena of the unwell.0 -
Ive purchased heavy duty induction ones from Robert dyas, still good 3 years later with everyday use.
And don't skimp on knives, I had some real *carp* that looked good but you will struggle. Vitorinox I can highly recommend ( as others do too )0 -
We have good pans and with the exception of the frying pan, they are still going strong after 16 years. Almost everything else we had at that time has broken.
If you want them to last forever, don't buy with a non-stick coating.Everything that is supposed to be in heaven is already here on earth.

Even the Le Creuset lifetime guarantee comes with heavy caveats on their non-stick coating.
Personally, I don't have a problem with any sticking on my stainless pans. My pans just get chucked straight in the dishwasher and come
up perfectly, so I don't see the point.
I've bought decent non-stick pans and even when they last years, the coating does deteriorate. I have kids too and a husband that would think nothing of cooking with a fork as an implement. Not worth the risk when there are products that do a perfect job.Everything that is supposed to be in heaven is already here on earth.

I got Stellar saucepans almost 20 years ago and they are still going strong. Unless I buy an induction hob I don't see that I will replace them for many years to come. I am definitely really happy with them. I have burned jam in one of them and was able to get it clean and looking good again. I know they are expensive but not so bad if you calculate a 20 year plus lifespan.0

Exactly the same here. They are worth every penny imho. Use the stainless Le Creuset pans, the traditional ones are too heavy for me.For every complex problem there is an answer that is clear, simple and wrong.0 -
I bought an induction hob so spahed out and bought Stellar pans from Amazon,after two weeks we sent them back as the outside of the pan was scratched just putting it in the kitchen drawer Amazon were very good at refunding the money.0

I'm not bothered about any scratching on my Stellar 7000 pans, or their price, but the design is carp. Like all pans with trendy see-thru lids, there are dirt traps where glass meets metal.
The manufacturers know this, but still produce the pans because they're what people want, or think they want, till they use them!0
