Knorr do ham stock cubes, that makes excellent stock for lentil soup. Cumin and smoked paprika, also lift the taste. Also coconut milk gives a good flavour.

I am not keen on tomatoes with lentils, just a personal preference.

My mil, famous Irish soup maker said my soup was as good as hers!! That's real praise. Hers is made with a ham hock, mine with a ham stock cube and bits of Aldi savers ham thrown in.

  • How about some other things with other lentils - Puy or green? One of my standbys when skint is green lentil and parsnip curry - with onions and curry sauce - and I also make a pasta sauce with green or Puy lentils and mushrooms!
