Not sure if this is the right place to post this but will see ...
I'm on another "must cut my food bill" mission and one of my "go to" recipes for lunch is Lentil Soup (just onions, carrots, celery - if I have any in - stock & red lentils). I suspect I'm going to eat a lot of this in the coming weeks so was wondering what others do to make it a bit more interesting ?? Thanks.

I wouldn't want to eat lentil soup without tomatoes in it and usually garlic as well.0 -

My absolute favourite soup - made in the slow cooker
Lentils - about 200g
Finely chopped onion, carrots, celery, potato
Bay leaf
Half teaspoon each cumin and cayenne
Pepper
I use ham stock so don't add any extra salt
Amounts all done 'by eye/taste'

Try chopped chorizo in it, with some tomatoes - it's a good way to use up a leftover couple of inches!0

Add some smoked paprika to give depth, or just a hint of curry powder to make it a bit more interesting. If you just add a touch, it won't taste of curry, but will shift the flavour enough to give you some variety.0

Pal of mine Loves lentil 'soup' - indeed, 90% of her cookery includes it.
Along with onions, tomatoes, balsamic vinegar, lemon juice, freshly ground black pepper, Lea & Perrins, Hendersons relish, tomato puree, garlic puree, any bacon lurking unattended, and the stray vegetables that didn't get used from the previous shopping.
On a sort of chuck it in, taste & see what seems missing method.0 -
If you add a few more spices you've got a Tarka Dhal:
• 850cc water
• 320g red lentils
• 400g tin of tomatoes
• 200g onion
• 20g oil
• 2 chillies
• 10cc cumin seeds
• 10cc turmeric
• 3 cloves garlic
• 5cc garam masala
• 5cc ground coriander
• 30g ginger0 -

Or, vice versa, left over Tarka Dhal with added water/stock makes a tasty soup.:)0
