  • Thanks everyone - some great ideas there :T
  • Red lentil hummus is nice for a change. If you don't have tahini paste, you can use peanut butter, or omit altogether.

A big thank you for starting this thread. I used to love lentil soup but my last few attempts were awful for some reason. I shall be trying some tomorrow .

For tonight it will be courgette, pea and basil soup as I am going to be good and use up what I have!

There was a really good recipe for a spicy lentil soup posted on OS a couple of weeks back, I remember thinking it would be worth trying (I find most to be a bland disappointment).

If I can dig the post up I shall. There's no point in wasting perfectly good ingredients on a tasteless dish.

  • red lentils are nice in a sort of pea and ham soup.
I also like lentil and tomato soup. with or without chorizo (as mentioned)
cooked well strained lentils mixed with herbs/spices of your choice and some strong cheese make a lovely filling for mushrooms
  • I like a tin of tomatoes and diced bacon, maybe a few diced potatoes.
I always add lentils to my carrot and coriander soup.
Lentils and red pepper is nice as well, especially when the peppers have been roasted.
  • I make a Red Lentil and Bacon soup in the slow cooker, using chopped up cooking bacon, a tin of tomatoes, chopped onion, celery, carrot and stock. Blitzed with a whizzer when cooked. Very tasty.

This is my go-to, it's dense enough to be a meal, but not so thick it's gluggy:

I've been known to use this also as a sort of hash sauce, throwing in cooked potatoes and a couple of eggs.

I looked at this soup/stew and thought it looked fab.
I did think tho... why only use the white of the leek? surely the whole thing can be used (the green would need finely shredding). I see this a lot in recipes and always think its really wasteful.
I also thought that maybe the soup could be made slightly more runny with small pasta bits added.
now that would keep you full for hours!
