Have I switched this iPhone correctly? (Total smartphone beginner)

I've been given a friend's old iPhone 4S as I wanted something better than my old nokia. This is my first smartphone. She was on O2 and I use TalkMobile so we rang O2 about unlocking it. They said it would take a few days. This morning they contacted her and said that it was complete and all we needed to do was put my SIM card in and connect to iTunes.
I haven't a clue about that. Neither of us have a PC or Mac, just iPads. So, I tried just putting my SIM card in and signing in with my apple I.D. This seems to have worked. It's synced all my photos etc from my iPad and all my contact numbers are showing up. I made a phone call to check it worked and everything seems great.
But I keep having doubts and thinking there must be an important reason they said to connect to iTunes. Does anyone know why O2 say to do this? I'm totally clueless about technical things, but if it's important to connect it, I'll try to find someone who can.

I thought it was done "over the air" these days rather than via iTunes

You don't need iTunes nowadays as all your info is stored in icloud0

Sounds fine. For the unlock to work it needs to be on wifi and you insert a sim from a different network - the phone then connects to the Apple servers to see if it can be unlocked.0
