I had a disaster like this recently, very watery soup, I boiled up some potatoes, and Liquadized them in with the watery soup, which thickened it up nicely, as long as you have got the flavour in your soup, this should work.

I agree. If you have added too much water, maybe add a stock cube in when you put the potato in?

  • I have been reading the 'soup bible' and there seem to be lots of ways of thickening soup, including adding oats or breadcrumbs. I usually use red lentils.

I would fry up some onion/garlic/shallot/leek and add that.

I always use sweated (ie cook in a bit of oil til translucent) alliums (ie this family of veg) as a soup base.

Another alternative, which I use for "bung it all in" soups that turn out not to work, is to freeze it in portions and then use it as the base for a gravy.

So any stew / casserole etc gets a portion of this (plus the necessary beef (whatever) stock cubes).

That is seriously well hidden veg! :)
