the leaven/starter/proof takes several days to get going, and you mustfeed it everyday anf get rid of some of it or you'll end up with a starter the size of your house! I have one that i've used for about 4 months; I've made muffins, pancakes and cakes with mine to use the proof thats not needed. The chocolate cake was gorgeous. If you don't want to feed it every day or only make bread once a week, keep it in the fridge then take it out 2 days before you are going to use it to start to feed it again.
Pancakes:
2 cups starter (yes, by volume, not weight - hint: 1 cup = 16 tbsp)
4 tbsp oil - mix in
4 tbsp sugar + 2 eggs - mix in
1 1/2 cups flour - mix in
then I let this sit in the fridge overnight. The next day when I want to cook it, I let it sit for 30 minutes on the counter to warm up, then add in 1/2 tsp salt and 2 tsp baking powder mixed into about 1/2 pint of milk. It will begin to bubble up like crazy, but its supposed to. Then cook. You can add more or less milk depending on how thick you like the pancakes - these come out like scotch ones - but dont' add more flour becasue it will just lump up. You can add less milk and top it up.
Chocolate cake:
1 1/2 cups starter
1/2 cup milk
1 cup plain flour
Let this sit for 2/1/2 - 3 hours
1 cup sugar
1/2 cup butter - cream together
add 2 eggs
1 tsp vanilla essence
1 tsp cinnamon
3 oz baking chocolate, melted OR 9 tbsp cocoa + 3 tbsp butter melted together
stir in gently then bake at 175'C oven in a greased 9" x 13" pan or 2 8" round cake pans. Can top with buttercream icing.
I'm working on variations of this one but they arent quite there yet. And no, I'm not eating them, I'm giving them to the neighbours!0 -

I haven't yet read all of this thread so appologies if I am about to duplicate.Costo have 6ltrs of milk which has just gone up to £1.39. We get our milk from there as it always has a long use by date and its quite near to where we live. Hope thats of some use.Blind as you run...aware you were staring at the sun.
