Generally speaking, for most people, both Nikon and Canon are good. They have lots of oem and third party equipment out there. Honestly go and try the cameras and see what feels most comfortable to use.

I found Canon to be more comfortable, and the user interface was more intuitive. You might find the same or the reverse.

As always, the important bit is the skill of the photographer and not the medium used.

I've been looking at the Canon EOS 750D, and the Nikon D5300. I'm a bit confused about which is the better one, I do landscapes and documenting and I don't know which one to choose. can you help me decide please?
Go to a shop that stocks the cameras you are looking at and physically hold them and have a play with them. You will probably find that you prefer the feel and ergonomics of one over the other. Go for the one that you prefer to handle. Both the cameras you mention will take perfectly good photos and both brands have a good range of lenses and accessories.

Castle Cameras have offered me a deal where if I trade my Pentax K30, I get the Nikon for £389 with a 18-250 lens. They have offered me £200 for my Pentax in part exchange, is this a good deal?

The Cannon is a bit expensive at £579.
