EE and moving house, absolute nightmare

I'm moving at the end of this month (29th July), and currently have phone and fibre broadband (Openreach FTTC) with EE. The house I'm moving to currently has fibre broadband (Openreach FTTC based) but when you look up the cabinet it says high demand and there's a waiting list. I rang EE's home moving team and they said because of this I would have to sign up to an ADSL broadband product and then upgrade when fibre becomes available, I didn't have a problem with this as long as it would be changed over soon after I move, which they said it would. I asked whether it would affect the service at my current property, as I definitely didn't want that, and they said no it wouldnt...
An hour later I receive the confirmation, and the changeover date is 27th July....2 days before I move. I rang them up straight away and asked how this was possible, and I'm then told that my service at my current property would be downgraded (which I was previously told wouldn't happen), and then I would have to ring the home movers team to start the move to my new property, which would take 20 days! I then asked to cancel the whole lot, as it was not what I was told would happen, to be told I was unable to cancel until the service had actually been downgraded as that's when my cooling off period starts. At this point I totally lost the plot
From previous experience, complaints don't make a difference unless you put it in writing, so I'm going to do that tomorrow and get it in the post in the hope that this downgrade that I didn't really want doesn't happen.
I've read a few things online that says you can sign up with a new provider in advance of moving, Plusnet claims to be able to take over the existing line and supply fibre, I'm not entirely convinced this will happen but sounds like it might be worth a go, and after this farce there's no way I'm staying with EE. Has anyone done similar to this when moving?
