Can I ask for help in educating me about condensed and evaporated milk? What are they and how could they, if indeed they could, be useful to my food stores?
Condensed and evaporated milks are both milks that have been heated until about 60% of their water content has boiled away and are then canned to be shelf stable.
You can rehydrate evaporated milk with water and drink it as milk because even in its concentrated form it retains all of the nutrition of fresh milk (hello, vitamin D).
Because it's thick, evaporated milk is also a good substitute for cream, even when making whipped cream and ice cream. Plus it has a lower calorie content than cream, if you’re into that sort of thing.
The difference between the two is that condensed milk then has sugar (quite a lot) added so can be used to make fudge caramel sauce by just boiling it down or can be used in place of both liquid and sugar in some recipes (and is also lovely in coffee/hot chocolate) but can't be directly swapped for milk without making your teeth fallout.Almost everything will work again if you unplug it for a few minutes, including you. fuddle, people used to have evapourated milk on top of tinned fruit, it is just that, milk that is evapourated, slightly thicked and is ok thinned. Condensed milk is very thick and was always very sweet, children used to love scraping the tins. I vaguely remember some people liked it in coffee. It makes good fudge
I have been prepping all morning for older age ie losing strength, so everything has been heavy going today and I am cream crackered. It is amazing how much you can move in smaller doses and sliding and twisting. The last bits in the garden are now sorted and I am happy. I`m one of those who cannot wait, if I have a good idea then it gets done there and then0 -
I used to buy evap when the kiddies were little as it was cheaper than whole milk once reconstituted and was recommended for them by good old DR Magnus Pike LOL
Also of course, you could have lots of tins stashed away just in case.0 -

Just a few thoughts on milk: we once inadvertently made evaporated milk by keeping a small pan of milk on the edge of a warm range cooker for an afternoon. Not sure how it would have lasted as we seived it and drank it in coffee. And you can add evaporated milk to jelly (instead of cold water) it makes a nice cold pudding with ice cream, specially if the jelly separates into clear and milky layers.
Kittie my DH is out of action at present following a knee replacement, and I seem to be getting stronger by the day. Trying to pace myself with short rests between jobs, but getting garden sorted etc. I made a decision to start equipping the house and garden with manageable stuff as I can't move pick up heavy things. So plastic pots and lightweight chairs etc. And it has really improved what I can achieve now himself is struggling.

Evaporated milk used to be diluted and used for feeding babies, before there was dried formula and we too had it on Sunday evenings over tinned fruit as part of 'Sunday Tea'. Condensed milk comes in tins and is thick and syrupy in texture, we used to spread it on bread as a sandwich filling when I was a child, no butter just the condensed milk. Probably too sweet for my taste now but I thought it was fab way back then.0

I love evaporated milk on jelly, memories of childhood.
I have found that it goes "funny" when out of date though, it turns a darker colour and smells wrong (I didn't fancy tasting it!)
When I was a child we usually had tinned cream, too. When I first tried fresh cream I didn't like it at all!0 -

Rather than evaporated or condensed milk, I tend to keep a couple of packs of dried milk (eg, Marvel), in my stores.0
