Windows Live Mail to "Mail app"?

I've been in a similar situation to the OP, having to replace Windows Live Mail 12, and wondering which email client to choose.
Using Windows 10, I chose Microsoft's 'Mail' programme which was already on my PC. It was easy to set up, the Hotmail email account is already in the programme and ready to use. I also have a GMail account, and just needed to input my email address and password. All straightforward and easy.
As with any new programme you're unfamiliar with, it takes a little time to get used to it. I only started using this afternoon and will eventually need to do a 'signature' for outgoing emails, and other things which will make it better for me to use.
I have a couple of extra folders for emails which I want to save, and these downloaded from Windows Live Mail 12, which was good!
So far, so good! Will see how it goes.

I am using the new mail app but 2 things I can't work out.
1) how to UPDATE the email lists
2) how to get the email up to FULL SCREEN size.
It was easy on the old version. Iam on a laptop not tablet.
