Flights for May with scheduled airlines will go on sale next month
For now only packages are available for May and now you've a better idea of what you want to book it might be a better deal to book flights and hotel seperately. I second the dibb recommendation for advice . I rather like the suite hotels with a bedroom and seperate living room and kitchen -nice for when the kids have crashed and you want to sit and relax in comfort yourselves before bed .....and generally more space to spread yourselves too without having to stay further out in a villa.

Thank you for your advice,that's a good point about doing separate to get a better deal.
Will hang fire a month or so and check out the flights on sites you suggested.
