does it matter about the cost? pressing a bearing out of a hub is becoming a dark art...

There is a bearing in there somewhere... And what can be assembled can be disassembled.

Dealers charge a lot for this sort of repair, their technicians most likely can't do this sort of job and they'll have to contract it out to a third party.
Dealerships do servicing, routine maintenance, minor repairs and ECU diagnostics print outs, most these days don't see the value in paying proper mechanics wages and experienced mechanics usually won't tolerate the way dealerships are run (by desk jockeys and salesmen).

No they don't!! Dealers do alsorts of work, including wheel bearings!!!

It looks like a "quality" aftermarket part comes in around £150 - £175. A bearing could easily pressed in .............. but it looks almost impossible to get the old one out without breaking something. The usual non maintainable design, easier / cheaper to manufacture with little thought of maintenance or repair costs to the customer.

Contract out a hub change to a third party?

Where do you get some of these ideas?

OP, take Edgaskets advice and buy the £27 made in Germany one off Ebay, then I would try and source a garage who will fit it, approx £75 to fit it ( two hours work ). Its not a big job. £500 is theft !
I thought a Yaris was supposed to be a reliable car, all my old bangers I used to "do up " I never had a rear bearing failure, maybe a slight adjustment and a bit of grease on them at the most. Your car is only 8 years old , can you actually feel a lot of play in the rear wheel or is it noisy or is the garage inventing a job ?

please dont give advice like this there is no way any decent garage would even consider fitting a £27 ebay fitment white box article

Well it wouldn't show up on an ECU diagnostics, so why would they?

I think you over estimate the skill level of the people that work for these dealerships.

one of the things you would do on even a basic service is spin the wheels to confirm tyres are all good no carbuncles brakes not binding and of course play in all joints by using the 10 to 3 and half past twelve positions
if the bearing has come up in the main dealer do you not think this is how they found it or are you saying this was farmed out too as guy waited in the deception area
