PE have indeed sent pictures and it is my number and the same model of my car. But we are one million percent that we weren't there at that time. My wife is an Avon lady and was out delivering at the time to which her customers can confirm.
She did go in on the 15th March when the store had re-opened and we have the receipt and it is time stamped 16:37. The incident was supposed to have happened on the 3rd March when the shop was closed!
Any advice on what to do next would be amazing

Very odd. Very odd indeed.
You should draft a POPLA appeal based on those you see in recent weeks (NOT 2015 ones, nothing about no 'loss'). But at the start, try to word something to explain this and say you believe there is an error in the date because the car wasn't there.
What 'date issued' is on the NTK?
Was it received within 15 days of 3rd March?PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).

Hi, the date of the event was 3rd March and the issue date is 19th March.. I didnt get the letter until about the 26th! Is the 15 days important?

19-3=16, so outside of the 15 days.
Therefore the notice to keeper has not complied with POFA, so it is very important that the driver is not identified. For the keeper to be liable, PE have to go through a specific process with elements that must be included in a Notice to Keeper, and within the specified timescales. Your NtK is out of time.
The keeper by law is not liable for the charge, and this will be a key appeal point at POPLA. (Never mind that you were not parked there anyway)
It is worth trying to get something in writing from Farm Foods confirming that the store was closed and that the car park was not accessible to the public on the 3rd, to hammer home the point that you were not parked there.0 -

I have got an email from Farmfoods confirming the store was closed.. Is there somewhere i can find a template to fill in my POPLA appeal? I have never been good at writing letters!!

No template and you are NOT filling in a form.
You need to read other POPLA drafts which are all over the forum recently. Crib from them and show us your draft based on them. Look for one that talks about no keeper liability.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
