We invested in a catering size pot from Costco and make industrial quantities of pasta sauce with onion, garlic, olive oil, tins of chopped tomatoes, tomato puree, mushrooms and fresh basil. We blend it and freeze it in plastic take-away type boxes in portions for 2. When we take it out we can add mince, Quorn, tuna, and serve with pasta or use to top pizza.
We make our own pizza bases which we also freeze. We defrost add some pasta sauce and top with grated mozzarella and other toppings. Our pizzas not only taste better than shop bought ones but work out much cheaper.
We also make large quantities of lentil, leek and potato, celery and fennel, carrot and coriander soup. Perfect for lunch or a filling snack. We also make lamb and chicken casseroles. We have haddock, tuna fillets and salmon fillets in the freezer too. We chop lots of veg at one time and keep them in ziplock bags in the fridge for 2-3 days and steam them as needed. We also make a large tray of roasted vegetables which lasts us for 2 days.
I realise that many people will disapprove of doing this as cooking from scratch for each meal is best. However, there are many reasons why this isn't possible for everyone with poor health being one of the main ones. This works well for us. I beg to differ! I don't think many people here will disapprove of batch cooking. I think it is what most of us with adequate freezer space and time would do. I recently acquired a little chest freezer (from freegle) and intend to do as much of what you suggest as possible as we will be kitchenless for several weeks and I can't afford to live on takeaways or junk. RT - id love to be able to cook and store that amount of food but I have no room for it!
I can double cood and make.extra portions fir the freezer but not at that scale tho. Its great when im.having a bad day with my health to be able to pull out a chilli/curry/casserole out for a healthy hone made tea tho. My SC is my best investment so far.Living the simple life0 -
My DH says I'll freeze anything that stands still long enough �� Luckily I have a huge chest freezer. I cook large batches of rice which can be microwaved from frozen in minutes. Also what I call 'dirty rice'. Cook turkey or chicken bits with onion, and add cooked rice and cool. Stir through frozen mixed veg and some Cajun/ 5 spice/ Garam masala and freeze in individual portions.
Also turkey meatballs and savoury muffins for snacks.

As the weather is getting a bit warmer you could freeze quiches, and little bites like samosas filled with either mince, Feta cheese & spinach, Burgers either made with beef or Turkey mince. Pasta sauces dont have to be complicated, tomatos, garlic and fresh basil.0

Try wetting your hand and flicking the excess water off onto the rice before reheating0
