Im struggling at the moment as im unwell due to my MS but have found making a meal and a portion for another day a great help. I have me & DH who works 11 hours a day and 2 little ones to feed.
Im usually very frugal and hate waste especially when it comes to food but im looking for some different ideas of what I can 'make and freeze' for another day.
We usually eat anything and are not fussy but have been stuck in a rut of -
* chilli
* spaghetti Bolognese
* curry
* casserole (beef, chicken or sausage)
Thibknas its supppsed to be getting warmer too it may be harder to pull off casseroles and heavy meals for long.
I love the idea of when im unwell just taking something frim the freezer and re heating or cooking in the SC/oven/pan etc
Any tips greatly appreciated - also anyone eith a similar illness and a family/job/busy life how do you manage?

In my freezer I've currently got all batch cooked.
Chilli
Lasagne
Spag Bol sauce
Corned beef hash
Cottage pie
Beef bourguignon also make pies with it and it's cooked in the SC
Quiche serve with salad and jacket potato or baked beans and wedges
MrM's cheese n onion pasties served with jacket potato and baked beans
MrM's Cornish pasties these are bought 2 for £2.50 so work out @ £1.25 for 4 instead of £1.75
The Cornish pasties are served with either wedges and mushy peas n gravy or potatoes and veg.
I buy pizza but will only pay £1 so buy when either on special or YS. Or HM when I don't have any in.
Yorkshire puds
Hope this helps xWhy pay full price when you may get it YS0 -
Thanks, I think im just stuck in a rut - might make pies, I usually buy them YS and freeze as a Monday tea with the left over sunday veg and mash.
Pizzas I buy the cheap £1 ones and let the kids add to it for an easy tea too.
Does quiche freeze as I used to make it a lot but never froze it.Living the simple life0 -
I love sausage mash and onion gravy. But hate cooking it.
So when I do make it I always make far too much and then freeze meal size portions.
Same with roast dinners.
Shepherds pie.
Cauliflower cheese.0 -
home made things I freeze:-
lentil dhal
macaroni cheese (well, not cheese cos vegan, but like cheese) with peas and sweetcorn
plated up roast dinners
nut roast
veggie haggis
fancy (but easy) HM bread with olives or peppers in that make a nice meal with soup, tinned or HM
rice pudding
scones
fruit crumbles
if you freeze puds then you can have soup and pud nights with no main course needed
I also keep pastry cos any leftovers make a decent pie (if wet) or pastie (if less wet)2021 GC £1365.71/ £24000 -
I freeze portions of veg such as ratatouille, mushy peas, cauliflower cheese, green beans in tomato sauce and potato dauphinose or mash. Then for a meal I can cook pork chop, chicken portions etc and serve with the veg.
I also batch cook fish cakes and freeze. They cook well baked from frozen.
I do a few curries and freeze, lentil Dahl, chicken curry and Bombay potato being favourites.
I make a big batch of pie filling. Then I freeze in small tinfoil dishes. I use the lid as a template and cut pastry and freeze, individually. Then I defrost the pie filling in the tinfoil dish and cover with a lid. If pie is not fancied then it can be served with spuds and veg.
Just a few of my time savers.
I do use convenience foods, a bag of frozen prawns, frozen spinach, spaghetti and a chilli pasta sauce makes a great meal. As does meatballs pasta and sauce, served with a side salad.0 -

A few of you mention cheap £1 pizzas. If you can get to a lidl their American pizzas are the nicest ones we buy. 89p and generous with it. We add lots of onions etc but the loaded cheese one which we normally buy has lots of cheese on it so doesn't need extra, like some miserable mean ones!Father Ted: Now concentrate this time, Dougal. These
(he points to some plastic cows on the table) are very small; those (pointing at some cows out of the window) are far away...:D:D

I regularly make and freeze batches of thick home made soup. Split pea and ham, minestrone, chicken and leek, Mulligatawny and Scots broth all freeze well; and adding extra veg and either rice,potatoes or pasta makes them substantial enough to make a quick tea with bread, cheese and fruit.0
