Meal planning - Wk 11th April

    Sun. Roast chicken dinner, stuffing, bottom of the fridge root mash, broccoli cheese, roast spuds and parsnips and yorkies.
    Mon, salmon steak, roast veg and cous cous.
    Tues quorn spag bol
    Wed, jacket potato, coleslaw, breaded chicken and salad
    Thurs burgers in buns, sweet potato fries and salad.
    Fri, something fishy

    Sunday - roast chicken, roast potatoes, braised red cabbage, green bean, peas, parsnips, Yorkshire pudding and gravy.
    Monday - Macaroni cheese and salad
    Tuesday - teriyaki chicken and rice
    Wednesday - Lasagne and garlic bread
    Thursday - chicken tikka tray bake
    Friday - beef rendang curry and rice
    Saturday - shepherds pie and veg

  • No idea what order we'll have these, but I reckon this week should look something like this:

    Chicken casserole and dumplings
    Corned beef hash with veg
    Some tomatoey based pasta with salad
    Soup and a sandwich
    HM pizza and garlic bread with salad
    Teriyaki stir fry noodles and veg
    Meatless roast, so yorkies, veg, roasties, gravy and stuffing

    I need to get back into meal planning, I've gone a bit rogue recently and thought here might be the perfect place to do it!


    So having found a few bargains in the co-op freezer section last weekend this is our week ahead:


    M - Co-op meal deal pizza and chicken goujons (it's my birthday so I wanted something that my boyfriend can just bang in the oven!)
    Tu - Bolognese made from leftover burgers from yesterday's bbq with dough balls also from the co-op meal deal
    W - Sausages (again leftovers from yesterday) with Yorkshire puds, veg and onion gravy
    Th - Chicken burgers (you guessed it - co-op freezer bargain!) with salad and wedges (co-op meal deal)
    F - Soup (using up some veg that needs eating)
    Sa - Chicken curry, naans, poppudums and dips
    Su - Roast dinner (what meat will be decided when I get to the butchers!


    Other than the meat for the roast I don't need to buy anything as it is already in the house :) I forgot how good it felt to plan out a week without needing anything!
    Light bulb moment Feb 2014! Total debt then £17,497.64
    Current debt £8121.16.
    Expected debt free date Aug 2030 with current plan but I will beat that date, I had to adjust it due to a drop in wages :(

    Mon - HM Turkey & apricot burgers with wedges
    Tues - Jacket potatoes, ratatouille
    Wed - Fried rice & quorn
    Thurs - Sundried tomato pasta
    Fri - Spaghetti bolognese
    Sat - Tuna pasta bake
    Sun - Chicken & leek casserole with dumplings

    Lots of pasta meals as the kids and I have competitions Fri/Sat/Sun and they are quick to make and easy to digest.
    Shopping on Thursday will include a lot of packed lunch type food to keep us all going!

    Tues - Homedmade pasta with creamy tomato tuna sauce and garlic bread
    Wed - Chicken/tofu fajitas with cheese and guacamole
    Thurs - Lamb kebabs, courgette fritters, tzatziki, asparagus salad and flatbreads
    Fri - Fish paella
    Sat - Chicken breast burgers/bean burger, oven chips and homemade coleslaw
    Sun - Roast chicken dinner
    Grocery Challenge - Sept £205.56/£350.00
