Thanks for the thread Newshadow :T

Our dog took bad this week and we were hit with a large bill, well large to us £99 excess. The total bill was almost £400
We are trying to take part of this from the grocery budget which is already tight.
Too keep a long story short it means that I need to spend next to nothing to get us through the week.

    Sunday-Bacon and vegetable lasagne
Monday-Salmon fillet with cous cous and veg
Tuesday-Chicken marinated in chilli honey and tahini with stir fry
Wednesdy-Meat balls and chunky veg on "Cabbage spaghetti"
Thursday- Piri piri chicken wings with HM coleslaw on jacket potato
Friday-Tortilla halloumi, jalapeño and pumpkin seed pizza with garlic bread
    Saturday-Vegetable curry with turmeric rice

Lunches will be cheese and onion quiche 1 day, vegetable soup 2 days and sausage and onion plait 1 day then cheese savoury sandwiches the rest.

Breakfasts will be cereal or porridge with dried fruits.

Snacks will be flap jacks, dried fruit with HM yoghurt and I'll make up some jelly and fruit as well during the week.

I don't need to buy anything to make this lot. I froze and prepared so much veg over the easter that it will get us through this week and beyond. I already have some nectarines in and oranges. After that they'll have to make do with dried fruit this week.
Might need milk towards the end of the week.
    £36/£240
    £5522

  • I am trying to eat out of the freezer / store cupboard again this week. DS is on a strict weightlifting diet so he's sorting his own meals. Here's mine in no particular order:

    1. fish pie with green veg
    2. shepherds pie with carrots
    3. faggots, oven chips and peas
    4. pork chops, jacket potato and any l/o veg.
    5. burgers, oven chips & salad
    6. lemon & coriander chicken fillets with salad
    7. burgers with vegetable rice

Breakfasts will be aldi weet bix or porridge
Lunches will be home made soup, or any l/o salad with crackers with any l/o cheese

I have some salad lurking in the fridge so will probably eat those meals listed with salad first. Should only need to buy milk this week

I'm having meatballs today, but this sounds lovely, how do you make it? I have all the ingredients except the lemon juice!

As with all my recipes - chop it all up and shove it in the minioven ;)

But, fry or bake the meatballs till about half cooked with the onion and garlic.

Dump in an oven dish and mix in all the spices with the tinned tomatoes. Dice the sweet pots into half inch cubes(ish) and chuck them and the peppers on top.

You can also add mushrooms, corn, BN squash, beans...

I probably use about a teaspoon of each of the spices, and a half of the chilli (wus).
That sounds like a classic case of premature extrapolation.
