That looks gorgeous do you think it would be good with cinnamon as I am out of ground almonds ? and it would make a nice change for my cake of the week I like to try a different cake every week for the family

P.S. some of the pears were lovely last night with the roquefort cheese btw;)
I think cinnamon would be good as an additional flavour, but substitute the ground almonds for the same weight of SR flour mixed with cornflour. That's what I'm going to do, then top with flaked almonds before putting into the oven.

Let us know how yours turns out? x

VfM4meplse has the right idea. The volume of ground almonds will need replaced with flour, but cinnamon would be a great flavour with pears for a cake.

You can also replace ground almonds with ground rice + almond essence + a bit extra baking powder!

Keeps it lighter than using flour!

My great aunt had a pear tree, and used to get gluts of pears every year. Peel, core and halve them. Make a syrup, boil pears in it. Cool the mixture and freeze. Portions of pear halves in Syrup on their own or with cream / ice cream make a good stand by dessert
