PROPER CUSTARD posh name Creme Anglaise
1/2 pt Milk
1 Vanilla Pod
4 Egg Yolks
1 oz Sugar
Save 3 tbs milk. Place remaining milk and Vanilla Pod in a saucepan. Bring almost to the boil.
Remove from heat and rest for 15 mins.
Put Egg Yolks, Sugar and saved Milk in a bowl and beat unitl thick and creamy.
Remove Vanilla Pod from rested sauce and pour onto Egg mixture.
Strain back into sacuepan and cook, stirring until it coats the back of a spoon.
Serve hot or cold. Will be much thicker if left to cool.Life's a beach! Take your shoes off and feel the sand between your toes.0 -
ooooh, thanks. got chocolate sponge for after tea but no custard powder and the kids won't eat it with ice cream.0

May I make a suggestion that when you put it back on the heat to cook that you put it in a glass bowl over a pan of boiling water.
Otherwise it does have a tendency to burn.0 -
thanks angela, i'll do that. always burn the bottom anyway.0

As not everyone has a vanilla pod in their cupboards, just substitute with a few drops of vanilla essence ... hope you have some!Wins since 2009 = £17,600MANY THANKS TO ALL OPS0

My variation would leave the vanilla out if not available, instead put a very finely sliced lemon rind (without any of the white pith because it is bitter) and a sprinkle of nutmeg on top.
Eat cold!

You can also replace the vanilla with cocoa powder to make choccy-cussyLife's a beach! Take your shoes off and feel the sand between your toes.0

My wife makes custard as has been specified above, except that she keeps a vanilla pod in a glass jar of caster sugar, and uses the delicately scented/flovoured sugar for custard
Lovely!:P
Fresh custard from M&S (or Sainsburys at a pinch) isn't bad either!
Now who has the best bread and butter pudding recipe? I have heard that spreading the underside of the top layer of bread with top quality marmalade is the secret?
