    Have you looked in the Windows.old folder in yout C drive
    I think this is the trick, combined with this article:
    http://www.tomshardware.co.uk/faq/id-2080311/backup-emails-mail-app-windows.html

    So while the article says c:\users\, the place to look will be
    c:\windows.old\users\{yourname}\AppData\Local\Packages\microsoft.windowscommunicationsapps_8wekyb3d8bbwe\LocalState\Indexed\LiveComm

    Note also the trick in the article about using * to make the email details visible.

    The files (.eml extension) are essentially text files, so if double clicking doesn't open them, you could open them from Notepad.
