As I don't seem to be able to eat a packet of the ham that I like before it goes out of date, is my idea of making sandwiches and freezing them a good one, but just making sure the ham is in date before I do it?
The answer to this is a big YES!
When I was working I used to make a variety of Sandwiches on Saturdays and freeze a weeks worth. It was so easy and convenient, and VERY mse!
I just packed them in sandwich size ziplock bags and took them out of the freezer before leaving the house. By the time lunchtime came around they were fully defrosted and tasted so fresh. Always use very fresh bread if you are freezing in bulk.
Here are some ideas for freezable sandwich fillings. Best of luck!

Also, remember that animals can suffer from food poisoning too. They are mammals after all.funny how folks think it is OK to give expired food to the dog.
A naturally-fed dog will have stronger stomach acid (lower pH) than humans which will kill off a lot of bugs that would make us sick.
If fed on commercial dog food, the animal will have higher pH stomach acid and will be made sick from the same bugs and toxins.0 -

I told you what the situation is. If we were this cavalier at work we would be prosecuted. It is your choice. .
Only in the world of regulations do things go from being safe to being toxic in a split second.
Use by dates etc ALWAYS have a safety margin, that's why common sense where allowed by regulations can be used. This is a system account and does not represent a real person. To contact the Forum Team email forumteam@moneysavingexpert.com0 -
Food doesn't go off at the stroke of midnight and I've occasionally eaten meat past the use by date before now.
However it is correct that food can smell and taste ok but still contain the bacteria that causes food poisoning in sufficient quantities to make you ill.
So if it's already been open for a while I'd be binning it.All shall be well, and all shall be well, and all manner of things shall be well.
Pedant alert - it's could have, not could of.0 -

This would make a difference for me - if the pack hadn't been opened, I would eat it; if it's been open for the best part of a week, I'd wouldn't be so ready to risk it.0 -
Hiya
I will eat stuff like ham if its OOD if a) it smells OK b) has not gone slimey c) I am sure I have kept it properly (i.e. it has not been unrefrigerated for more than 10 mins at any one time + I got it home and in the fridge within the half hour d) it is not more than 3 days over the sellby date
Hope this helps as a middle way.
I hate frozen sanis so cannot comment there! I do freeze my own cooked ham - have never tried it with commercial ham .

Can I ask why you hate frozen sandwiches if you freeze the ham anyway?
I loved them. So convenient and easy and time saving and so on. And I am still here! Just curious. Thanks.0 -

And before anyone say s "we all eat a peck of dirt" etc. etc. Remember that it only takes 10 cells of e- coli 157 ( as an example) to cause total renal failure and death.Under ideal conditions ( for bacteria) cells can double their number every twenty seconds!
Just to sign off, almost ALL food poisoning occurs within the home because of poor food handling, and fridge management.
I would maybe risk opening an unopened pack one day late, but I'm not sure I would def eat it. I wouldn't trust an open packet thats been open for a few days!:AStarting again on my own this time!! - Defective flylady! :A0
