veg/fruit box alien food and yucky things.. help!

    Mrs CD posted this recipe online on another forum and I made it and its delicious and I sliced it up and froze some or i would have scoffed the lot Nicest fruit cake ever



    Fruit Cake

    Pineapple pieces, mashed to a pulp (370g)
    Sunflower Spread (115g)
    Caster Sugar (115g)
    Sultanas or any dried fruit (450g)
    SR Flour (115g)
    P Flour (115g)
    Bicarb (1tsp)
    Eggs (2 eggs)
    Cherries to decorate


    Method
    Melt butter and sugar in a pan, add sultanas/dried fruit and pineapple and boil for 3 minutes.
    Add Bicarb, stir well.
    Leave to cool overnight.
    Add flour and beaten eggs.
    Pour mix into lined tin and decorate with cherry halves.
    Cook at 140C for 1½ hours, reduce heat to 130C for ½ hour

    or it's a favourite of mine in a fruit salad along with other fruits that are 'harder' and/or don't brown. I use pineapple, orange (satsumas etc) segments, kiwi fruit and grapes.

    I'd also use cabbage for coleslaw. I mix it with grated carrot and onion and a dollop of mayo.

    One of the nicest veggie meals a friend once made me, was spinach and mushroom pasties using flaky pastry. I think she might have used a small amount of sauce to bind the filling.

    If your family are jam eaters I make a lovely Pear & Lemon jam. Much nicer than it sounds and ends up a pretty pale pink when it's ready.

    I recently made Pear and Parsnip soup but it tasted too sweet for my liking but that might appeal to you.
    I'd love the recipes for those, pretty please.:o

    Just as an aside, someone suggested pineapple to help get rid of mouth ulcers - it seems to work, at least it seems to be helping me! Luckily for me, I love pineapple.:D

    Pleased to oblige LAMEWOLF- this is the Pear and Lemon Jam recipe I use http://www.cottagesmallholder.com/pear-and-lemon-jam-recipe-93/

    The Pear and Parsnip soup I cut from a mag and threw away when I didn't like it, sorry! But any Apple & Parsnip soup recipe should work ok by just substituting pears for apples.

    Of course it is, you can use any fish or combination of fish/shellfish in a fish pie.

    I see it as our OS duty to torture you with all the delicious things you can do with a cauliflower :D

    I know you're not a curry fan, and it's probably not one that a cauli-virgin would even contemplate making at home, but I dare you to try this if you ever eat at an Indian restaurant: gobi paratha . Indescribably blimmin' delicious.
