Easyjet Flexifare trick

Hi all
First post so I hope I'm doing it right!
I have just discovered the Flexifare trick & am seriously considering trying it. We have accommodation booked for May 27th to June 5th. This is half term & the flights are currently around a £1k with bags! If I booked flights going out on May 23rd they are a lot cheaper!
From what I can gather, the only risk is that there may not be availability on the actual flight I want. With me booking 4 months in advance, I should surely be OK?!
I'd love to hear from people who have successfully carried out this trick.

The problem with half term holidays is demand is very high and it is very important for easyJet to maximise revenues in this period. They are well aware of this trick and read MSE too, if it is a holiday destination they could just remove flexi fares from sale on certain flights.
Where in the Uk are you?
Can you fly in the evening of May 26th?
