Warm weather holiday - February break with places to explore?

I'm currently in Almeria province in Spain. Day times are mid 60s to 70s, rather nippy at night though.
If you were looking to explore/walk/eat and not looking for a beach holiday then this would be perfect. Empty roads, easy driving and scenery to die for.
