I admit-this one is a frozen from waitrose job, but I normally make it myself! All I do is sweat some leeks in a very small amount of water, then add some cornflour and english mustard powder, cook it off and then add milk to make a white sauce-cook for a few minutes to thicken and then add cheese (leaving a bit to sprinkle on top) (you could just add any mustard rather than the english mustard powder but I have a tin of it, about 12 years old and nearly full-so I try to use it when I remember
 )
Pour over fish (AMAZING with smoked haddock, especially on a bed of spinach!) and bake for 25-30 minutes.
You can make a while sauce with butter and regular flour, but I use cornflour for ease. Plus I prefer to add my butter calories to the veggies than the sauce

            Here's mine for this week:

Tues: smoked haddock chowder
Weds: Tuna steaks with potatoes and sweetcorn salsa

Happy cooking!
