    I use nigella's recipe and keep it in a lock & lock box. I simply switch 300g of flour for porridge oats. I normally blitz them in the food processor just to make them finer before adding to the mix.

    I make a batch up on a Sunday and soon as they are cold I put them in the freezer. Take 2 out to defrost every night ready for breakfast and pop them in the toaster in the morning to reheat.

    You can also add your own flavours to each batch, I'm tying to use up an open jar of mincemeat from Xmas so it's been added to last 2 batches and it's lovely!
  • Our menu plan for this week in no particular order:

    Sweet chilli chicken stir fry and noodles
    HM Spag Bol (from freezer) and garlic bread
    Battered cod fillet (from freezer), chips and mushy peas
    HM chicken curry and rice - will make plenty for freezer
    Roast half leg of lamb, roasties, veg, yorkshires
    HM chicken kievs, wedges, peas
    HM chilli (freezer) with rice and jacket spuds

    Our weekly meal plan for 4 adults (and an ever hopeful doggie and cat)

    Breakfasts -option of cereal, toast, eggs, bacon.
    Lunches - cobs with cheese, leftover chicken, tuna mayo.
    Puddings - yoghurt, ice cream, banana bread, cake or pancakes.

    M- Stuffed Roast Chicken with yorkshires, roast taters, cauliflower, broccoli, carrots, peas, cabbage and gravy, trifle for pud-we have shifted the traditional Sunday Roast over to Monday nights as it suits our family better for now.
    T- chips or wedges with either cold chicken or freezer foods, pancakes for pud to use up leftover Yorkshire mix
    W- Chicken egg fried rice made with leftover chicken, onions, cabbage, peas.
    T- steak and ale stew with mash or boiled taters and veg.
    F- Saut!ed potatoes made from overage of Thurs taters and whatever needs using up or freezer food.
    S- chicken curry with samosas naans and poppadums.
    S- Sausages with onions, beans, mash and gravy.

    Here is our Meal Plan for the coming week based on a low FODMAP, IBS, Gluten Free and low Sugar diet.

    Mon - Beef Brisket Sv with Tartiflette Potatoes & Veg
    Tue - Braised Beef With Red Wine with Parmesan Mash & Veg
    Wed - Roast Salmon/Cod with Cheesy Mashed Potato Pancakes
    Thu - Salisbury Steak with Onion Gravy & Mashed Potatoes
    Fri - Orange Salmon/Chicken with Pilaf Rice
    Sat - Pork Loin Steaks Sv with Root Mash & Veg
    Sun - Winter Pot Roast Beef with Root Mash & Veg

  • I always follow these threads with interest but never remember to post my own! So here goes:

    Monday: leftover gammon, eggs and chips
    Tuesday: spaghetti bologniase for me, chilli cheese bake for him (using one mince for the two!)
    Wednesday: undecided
    Thursday: chicken wraps with peppers, onions, lettuce, tomatoes and nachos
    Friday: aldi fish cakes, chips and mushy peas
    Saturday: home made pizza
    Sunday: beef casserole

    Will have to have a think for Wednesday - I work until 9pm so will have to be something easy for him to cook lol

    Tuesday - cottage pie with veg
    Wednesday - steak and salad
    Thursday - faux spicy vegetable rice
    Friday - chicken stir fry
  • I am also trying to eat amap from the freezer/cupboards

    Mon - pasta & sausage meatballs
    Tues - Salmon & thai coconut rice
    Wed - Soup, crusty bread, some sort of stodgy pudding
    Thursday - chicken fillets, savoury rice & veg
    Friday - Pasta bolognese
    Saturday - Curry night, various HM curries, HM naan, shop bought starters & rice
    Sunday - HM Pizza

    Just some Mozarella for the pizzas needed when I shop on Thursday, plus bread, butter, milk and fruit for breakfast/lunch. should be another cheap week as Mon-Fri next week will also be mainly from stock :) I hope to bring the monthly food spend in under £100 down from an average of £320.

    Hi everyone, I haven't posted in a while :)

    M - Sausages, bacon, fried eggs, black pudding, potato farl & beans.

    T - Stew.

    W - Pulled pork with bbq sauce in crusty baguettes.

    T - Beef burgers from butchers, mash, fried onions, peas & gravy.

    F - Spanish chicken with rice.

    S - Breaded fish, chips, mushy peas, onion rings & curry sauce.

    S - Roast chicken, mash, roast potatoes, carrots, sprouts, stuffing & gravy.

    Thank you for the recipe and tips. I'll have a go at these next weekend and hopefully get a batch for freezer breakfasts. I appear to have quite a few porridge oats in stock and have went off porridge! Time to get my hand me down food processor out to blitz some up.
