If it was me in your position, I'd be looking hard for another job, but maintaining dignity and professionalism until then. You can't change how he behaves, you can only change how you react to it.
I think it sounds like you're well shot of this man; he sounds very immature and unable to handle the complications of a relationship. Once you are away and working somewhere else, I hope you can forget all about this, and stop worrying about why he behaves the way he does. I bet you just won't care any more.
