How does one get apple to honour the "unofficial 2 year warranty on their product in the second year?

    Otherwise it would be the same when buying from Apple and when buying from dealers. I.e. after a year Apple could have forced you to jump through hoops (prove that it's a manufacturing fault) like 99% of dealers do. After two years (not after six like the 'consumer laws in UK' say) Apple usually do the same as other companies.

    Re how to honour, I am not an Apple fan and don't have any personal experience. AFAIK, one just contacts Apple and they replace the phone unless it's damaged. No proofs needed that the stupid UK law allows suppliers to give customers runaround with.

    Make an appointment and ask them to honour their "consumer law" warranty (which is what they call it).

    As long as you bought the item directly from Apple and it has no damage that would void the usual warranty they will repair/replace without any issues.
