I'm feeding 8 this year - 7 adults and our toddler! The leftover veg with be blanched and frozen (along with as many reduced sprouts as I can find - love the little beauties
) if it's already cooked then it will go with other meals on boxing day/the day after
I'm hoping we have some meat - I've ordered a meat pack that's to serve 8 but the bacon and sausage will go straight in the freezer as it included ready made pigs in blankets. There pork we are having on boxing day at my parents (there will be leftovers which dad will slice and give me a little and then the rest will go in mum and brothers sandwiches) on Christmas Day we are having turkey (crown), gammon and beef. I am going to slice it before I take it to the table (or rather my dad is going to) and put out enough for everyone to have a slice of each which will also mean they eat the stuff, Yorkshires, pigs in blankets and veg! Leftover beef will be frozen in slices, maybe in gravy. Leftover turkey and gammon will be halved - one half sliced and frozen and the other cut in to small chunks and mixed with a white sauce and probably peas hen topped with potato or pastry then frozen as a pie

Christmas Day is mums turn to cook, I'll be sent home with left over turkey and stuffing, which unfortunately will be very dry so I'll chop most of it up and add it to a sauce and then freeze, couple of slices will be eaten Boxing Day with lots of gravy.
New Year's Day I'm cooking a joint of pork, I'll save some for sandwiches and the rest will be portioned up and frozen for sandwiches for work.0 -
Leftovers.....
I do not like eating them next day or anything, but I don't like waste either, so try to get the volumes right, but it never works out that way does it!
There are only three here for Xmas Dinner, so there should be minimal leftovers, but if there are (besides enough for picking at during the evening etc.), I make "Christmas Bubble and Squeak" next day.
I just whizz EVERYTHING, turkey, stuffing, ham, veg, spuds, roasts, everything for a few pulses, a drop of leftover gray binds it. Make into patties, and dip in flour, egg and breadcrumbs. Fry off as many as I can make, and EAT and freeze the rest.
They are just so nice!0 -
Leftovers are good.
If you've cooked the turkey right it will still be nice cold next day with lots of nice salad type stuff.
Then a curry.
Then sweet and sour.
And sandwiches of course.
I speak as one who for years did a HUGE turkey for 3 people. Lasted us for 5 days0 -

We have chicken for xmas - I'm veggie and the family don't like turkey, that gets used up quickly. Leftover veg goes into a Boxing Day hash - all chopped through and saut!ed. With leftover cheese - it does happen end pieces left out I make Delia Smiths Veggie sausage rolls it's a good way to use up bread crusts or leftover stuffing - if you do the breadcrumb not meat version of stuffing. I freeze Yule log in slices and eat when we feel like it. I make a fair bit of soup - did a lovely carrot one today for tomorrow's lunch. I don't eat xmas cake or cams pudding but both can be broken up and stirred into softened ice cream and refrozen. I can't think of anything else we have leftover but if I do will post some ideasDMP 2021-2024: £30,668 £0 🥳

The left over veg and pigs in blankets etc gets hashed up the next morning for breakfast with extra bacon and fried eggs and lashings of brown sauce yum!!

Can anyone suggest a recipe for left over sweet potatoes?We are having a party for the in-laws a couple of days after Christmas and I'm doing sausage and mash-three kinds of sausages, veg, ordinary mashed potatoes and sweet potatoes.
I'm not even sure how many are coming yet .Knowing DH's family I'll probably find out on the day.0 -
You could mash up leftover cooked sweet potatoes to make a topping for cottage/shepherd's pie. My Mum does a lovely version of this as a chilli pie - chilli con carne underneath and sliced sweet potato layered on top, bit of cheese melted on top at the end - lovely.
For Christmas leftovers, veg will become bubble and squeak or go into veg soup. Turkey - maybe a couple of turkey sandwiches but most is sliced for freezing - it gets warmed up in gravy, added to risotto etc for quick meals through January.
