    Any turkey left over goes into a Coronation Turkey for Boxing day buffet.

    Ahh BB - that took me right back to when my Nan used to make this - I,m going to have to give it a go :D

    Pretty much the same as us.
    We have a large leg of pork (even though there's just the 2 of us) as it cooks better than a small one.
    I'll do enough veg for 2 days and the remaining pork will be sliced & frozen along with the stuffing for dinners, pork sandwiches or mash & pickes.

    We won't have many leftovers as I've really cut down this year on what I bought for Christmas and Boxing Day main meals. My thinking is that whatever leftovers there are will be eaten the following 2-3 days and then I can get back to proper meal planning after a few 'picky' days :D

    It's a duck for us and I'll do a smoked ham too.

    The duck will all be eaten on xmas day and the ham will be used for cold slices and snacky bits with leftover veg pan-fried, stuffing and pigs in blankets on Boxing day. I make extra trimmings as they're loved by everyone.

    We won't have a starter and usually pudding is eaten later in the evening. I never make huge amounts so there's no waste.

    The ham will be used up in lots of things like pasta, omelets, soup etc and portions frozen.

    We have a goose and a small ham. Both will be used in other dishes like hash, or sandwiches, wraps. The veg will be blitzed into soup for January.

  • There are only two of us, so I don't go crazy with what I buy when we are having a quiet one like this year.

    If we are peckish, in the evening on Christmas day, we have cold meat sandwiches.

    On Boxing day, if we don't have visitors, we have a turkey and stuffing pizza (sounds awful but is actually really nice). If we have visitors, I encorporate them into the buffet.

    Out of interest, we were discussing at work the other day how long after Christmas day we would eat the turkey for. The answers were really varied! What would you guys say?

    Anything that not eaten by bedtime on the 28th will be sliced or chopped and put in the freezer.
    Why pay full price when you may get it YS ;)
  • We usually have the same again on boxing day - all the yummy food without the prep! With leftover brie last year I made pannis with turkey, cranberry and stuffing. Mash and veg can be used for soup.
  • I would keep the turkey for eating on 26th and 27th if cooked on the 25th, if I knew it wasn't going to be eaten I'd freeze it on 25th/26th.

    Assuming I have any leftovers - I wont if I judge it right - then they will be used up over the next few days. Why DO people buy massive amounts if they aren't feeding lots of people? to me - expecting lots of leftovers is a very wasteful way of catering Christmas.
