I assume I'm not alone in needing to plan around various seasonal activities and demands?

Very bitty week this week, and it only gets worse between now and Christmas.

So easy to get carried away this time of year... brekki and lunch at home are catch as can.

Work - Mon, Tues, Wed
WFH - Thurs AM, Friday AM
Hospital Thurs PM/Xmas party Friday PM

Breakfast @ work
Yogurt, Oats, frozen fruit (have to check what's in the freezer)

Lunch @ work
Savoury rice - leftover shredded duck, courgette, aubergine, orange pepper, sweetcorn.

Dinners
Duck, veg, root mash
2x Roast squash
Omelette
(work) Christmas dinner

Snacks
Mini oranges
Sugar free jelly with fruit
That sounds like a classic case of premature extrapolation.

House Bought July 2020 - 19 years 0 months remaining on term
Next Step: Bathroom renovation booked for January 2021
Goal: Keep the bigger picture in mind...

Its getting harder to meal plan as DS will only eat certain carbs at the moment due to his weightlifting "diet" - mainly sweet potato and rice

    1. cod with sweet potato mash and green veg (broccoli cabbage)

    2. hot and spicy pork steaks with roasted sweet potato and roasted veg (corgettes onions peppers)

    3. sausages with onion gravy, sweet potato mash & green veg

    4. chicken curry and rice

    5. chicken tray bake - with roast sweet potato, corgettes & peppers etc with garlic and herbs

    6. chicken and peppers with blackbean sauce and rice

    7. probably sunday - pulled pork in the slow cooker with sweet potato home made chips & tinned sweetcorn & salad

It's the end of the month here and I've raided the freezer today and batch cooked. It's a rather beef heavy menu :o

Breakfasts will be greek yoghurt and a piece of fruit or oatcakes, wavers of cheese and tomatoes.

Lunches will be lentil and tomato or spicy butternut squash soup.

    Dinners:
    • Spaghetti bolognaise with salad side plate
    • Cod roasted with veggies, herbs and lemon and wedges
    • Beef and green pepper madras with rice (sc)
    • Soup and pudding night (quite fancy jelly, fruit and ice-cream)
    • Beef and root veg stew with dumplings
    • Frittata with bacon and LO veggies, hm coleslaw and salad

I'm sure I spotted creamy cod in another thread so may do that instead.

Have a good week everyone :money:

No problem. The chicken one pot is from here http://www.bbcgoodfood.com/recipes/1363634/summer-chicken-onepot
I only put 100g soft cheese in it.

The bacon hash is this recipe http://www.bbcgoodfood.com/recipes/67611/austrian-hash
I use a pack of back bacon.

They are both delicious. The bacon hash is a favourite in this house. It was the first time I had made the chicken one pot, but it turned out well.
