My plan for this week -
M - Tomato, veg and pancetta pasta
T - LO pasta
W - Meatloaf with mashed potatoes, peas and gravy
T - Out all day (lunch provided), cereal bar on the train most likely!
F - Quorn and veg curry with rice
S - Macaroni Cheese
S - Sausage sandwiches for brunch / Sausages with mash, Y puds, peas, corn and gravy

I'm assuming this is some kind of sausage and bean casserole, but do you add anything to make it bbq or chilli-ish?
I've seen it like a boston beans before now - with diced smoked bacon, brown sauce and black treacle.
No sausages here but there are lots of variations. This one was cobbled together a bit but roughly (as far as I recall....) it was:- 1 x chopped onion
- 1 x finely diced carrot / grated (basically lobbed this in to up the veg content and it needed using up)
- 1 x tin baked beans
- 1 x tin taco beans (these were just mixed beans in a chilli type sauce)

- chopped mushrooms (again these needed using - you could include or exclude them)
- 2 x chopped chilli's
- stock cube (i think!)
- Good dollop of BBQ sauce / marinade - i used this as it was in the fridge

Method- lightly fry the copped onion and the carrot until soft and onion is translucent
- add in the two tins of beans and the mince (using soya or quorn mince you don't need to brown it, if you used meat, you would brown the mince then add the beans)
- add in the chopped chillies
- stir in the chopped mushrooms
- crumble over a stock cube
- add in a dash of worcester sauce, a splodge of ketchup and a dollop of brown sauce (include or omit depending on what you have)
- I also added approx 1 tin of water - poured into the bean cans and swirled out to get all the flavours and sauce out (been doing it long before Nigella
)
- season and allow to simmer on the hob, or put in a low oven until the mushrooms are cooked and the flavours have infused
My cowboy casserole is very similar to my chilli but uses baked beans plus taco beans or any other can of mixed beans instead of just kidney beans and bbq sauce for a smoky bbq flavour (think cowboys bbqing round the camp-fire.. oh heck no more watching Nigella for me :rotfl:)
You can add more veg if you like / depending on what you have in the fridge, and could use sausages instead of mince. You can also add in some bacon but obv as I was cooking for a veggie I left this out.Feb 2015 NSD Challenge 8/12JAN NSD 11/16

Our meal plan is as follows:
Breakfasts: DD: choc spread on toast. Me: Marmite on crumpets
Lunches: DD packed lunch at school. Me: LOs or chicken/tuna salad wrap with HM soup
Dinners: M- Chicken Kiev with HM chips and spring greens
T- Jacket spuds with cheese, bacon and broccoli
W- No DD, Left over sausage casserole with mash (in freezer),
and carrots.
T- Cottage pie with spring greens and broccoli
F- Quesadillas with salad
