    I made this and it is fab!! I need to find some smaller jars as i will never get through that much, but my cheese sandwich tasted much nicer yesterday :-)

    Although I haven’t actually made it, it sounds delicious, & on my list of ‘thingsTOmake’!


    Green Tomato Salsa from Amy’s ‘thethingswemake’ blog
    Amy says “Over the past week, Josh has made two batches of this since we had so many green tomatoes that just weren't getting ripe in our cool fall weather. We love salsa in our house and since it can be pricey, we figured that this could be a great use for all of that fruit—and boy were we right. This stuff is downright delicious, which is surprising since I never knew that you could do so much with green tomatoes. The original recipe is from Better Homes and Gardens, but we increased the spices to give it more flavour. If you are sensitive to heat, seed your peppers. (Also, feel free to fill your pot with green tomatoes if you have that many to put to good use—Josh did that and both of our batches yielded closer to 4 quarts!) We kept a jar in the kitchen after putting all of the others down into the basement for the winter and we've eaten this with chips and spooned on top of vegetarian chilli so far. I can't wait to have it with scrambled eggs and with rice and beans. “

    Makes 5-6 pints

    15 cups chopped green tomatoes
    2-3 Anaheim or poblano chillies, chopped
    2 jalepenos, chopped
    2 large onions, chopped
    1 cup chopped cilantro
    1/2 cup fresh lime juice
    1/2 cup white vinegar
    5 garlic cloves, minced
    1 tablespoon salt
    2 tablespoons cumin
    1 tablespoon pepper

    1. Chop tomatoes, removing the core and seeds. Let drain in a colander for 30 minutes.
    2. Transfer tomatoes to a large pot and bring to a boil, then reduce heat to a simmer. Let simmer, uncovered, for 1 to 1.5 hours, until your tomatoes are thickened (to a salsa-like consistency).
    3. Add the remaining ingredients and simmer for 10 minutes.
    4. Ladle salsa into hot, sterilizedwith 1/2 inch headspace. Wipe jar lids clean and tighten lids.
    5. Process jars in a boiling water bath for 15 minutes (start timing when water is boiling). Remove from pot and place on wire racks to cool.

    Hi
    I have loads of tomatoes in the fridge ( a full drawer full :o ) and i have all our meals planned untill saturday night ...
    Can anyone think of anything i can do with these, as i dont want them to go to waste ;)

    I used a few in a phily puff pastry tart and that was yummy, but im back on the weight watchers trail so i need something realitively healty .... im thinking soup and mebbies freeze some - but does anyone else have any more inspirational ideas :D

  • I rather like them as an accompaniment as a tomato and onion salad, or even better mozzarella, tomato, avocado and basil tricolore salad.

    If you lack inspiration just cook them down with some sweated onions and celery and pop that in the freezer for next time you need a sauce for pasta or are making a chilli/lasagna/whatever

    Bake them in their skins to intensify flavour, chill, remove skins and chop then put in freezer bags to freeze. Then use them in sauces/bolognese etc.

  • Id change part of your meal plan if poss to use them up, like homemade pasta bake/cheese n Tom pizza add a side of salad to meals if poss etc

    Ninth Anniversary Combo Breaker
    Hi all,

    I bought two packs of tomatoes on the vine from Aldi a couple of days ago and noticed today that most of them are already starting to look a bit sad.

    Any ideas as to what I could make with them? I thought about tomato soup but, perhaps, somebody will have a more exciting recipe?
