From what I can see Easyjet abide by the List of Prohibited Hand Baggage Items published by the EU as does Schipol airport
That states that perfume can be carried in hand luggage provided it is below 100ml and in a resealable clear bag the same as other liquids.

OP states it was under 100ml

But the perfume that the OP had was under the 100ml limit and so should have been permitted on board.
Regarding cigarette lighters. You are actually only allowed one lighter per person in carry on baggage.

I've taken perfume in my hand luggage too many times to count, I never travel without it.

It wouldn't even occur to me to ask, as long as it's below 100ml there no reason for it to not be allowed. What prompted you to ask them OP?

Duh! Apologies, I appear to have baby brain and read it as over 100ml for some reason.

In which case, it was perfectly permitted if it was in resealable plastic bag, a per their website rules.

I would write to them asking under which rule was it not permitted, and stating that unless they can specifically refer you to their T&Cs covering this, you expect a refund of the extra money paid.

You mean the bit that says

Taking liquids through security

There are restrictions on the amount of liquids you can take in your hand luggage. If possible, pack liquids in your hold baggage (luggage that you check in).

You say you had checked Gov.UK website - which clearly says:

and Easyet website which says:

Can I carry liquids in cabin baggage?

You can bring liquids in your cabin baggage as long as:

• they are stored in containers no bigger than 100ml and;
• carried in a clear, re-sealable plastic bag with maximum dimensions of 20 x 20cms.

Each passenger can carry a maximum of 1000ml (e.g. 10 x 100ml). You’ll need to present your bag at security and you may be asked to dispose of liquids that do not meet these requirements.

so why did you then decide to check with Easyet?

I wonder if they misunderstood your question.
I find it strange that they would tell you that you couldn't take a container of perfume with a capacity of less than 100ml in hand luggage.

It wouldn't have been Easyet who had the say over whether you could take the perfume through - it would be at Security.
If the perfume had been in your clear plastic bag with any other liquids, nobody would have batted an eye.
At no stage would Easyet rifle through your hand luggage checking your liquids.
They would ask at check-in if you had any liquids over 100ml.
Your reply would have been 'no' and that would have been the end of it. and that's assuming that you hadn't checked in on-line and bypassed Easyet check-in.
And of course Easyet wouldn't have a policy of 'no perfume in hand luggage' because you could have bought some in Duty Free (after check-in and after Security) and put it in your hand luggage.

If your email to Easyet is unambiguous and their reply is the same, I would follow pinkshoes' advice and ask for a refund of the checked luggage fee.
