BA reject my claim but lied on reason why

I was scheduled for a BA flight at approx 19.50 hrs from Faro to Gatwick 2 weeks ago and they delayed this flight and rescheduled it over 16 hrs later. We were told by the ground staff it was a technical fault and the plane was delayed in Edinburgh. The flight was then scheduled to arrive at midnight but at 9pm they told the plane would arrive at midnight as planned but the cabin crew had run out of hours they could work. We received a letter from BA staff informing that the flight was delayed due to a technical fault.
Once on the flight the following day the captain spoke to the passengers stating the flight had been delayed for technical reasons. During the flight 2 cabin crew told us it was because a bird had got into one of the engines..
I submitted my compensation claim and BA rejected it and their reason why?
Adverse weather conditions!
I can't quite believe t as I know and have checked there was no wind or rain on those 2 days and that is not threats on we were constantly told.
Does any have any advice or experienced a similar scenario?
Thanks
