How many is this for?
I'd be tempted to do some type of baby spinach and potato omlette to use up some of what is in the fridge. You could add extra courgette, brocolli, red peppers and spices. This is delicious cold for lunches too and keeps well in the fridge.
*pepper/mushroom/kidney bean fajitas
*with flour you could make pizza's/lots of cakes.
*Lots of veg for soup..Brocolli and cheese is nice
*corned beef ash with dumplings. or corned beef pie with a dumpling crust.
*veggie chilli (3 bean etc) with rice or wrapped in enchildas and baked in the oven with passata and mozarella
*beef and onion pies with smash n beans!
*Theres lots here for fruit salad. and you could try granola bars/flapjacky things for all the nuts and seeds.
*Green lentil korma with rice. HM onion bhajis/naan are easy and delicious.
Can't see much else..but I'm a carnivore by nature!0 -

Veg enchiladas rather than meat

just remembered that at the moment I'm partial to veggie courgette burgers which are mash potato (might work with smash) with with fried onions, grated courgettes and cheese. shape into burger shapes and fry. nice for lunch with some salad.0

I've used the passatta sauce and some veg that was going a bit wrong in the fridge to make a veg sauce, gonna put it with couscous and some of the grated mozzerella for tonight! x0

How about making cowboy pie? Corned beef and baked beans with mashed potato (or smash) on top.0

One roast chicken with the baby potatoes & carrots (save the tops/tails and one for the stock) - do you have some frozen veg too?
Cold chicken salad using leftovers.
Make stock with the carcass & bones, retain any scraps of meat that float off the bones. Chicken & sweetcorn soup with the noodles added. Or do some savoury noodles as an accompaniment.
For £5 I reckon chicken is the best option as you should get 3, 4 or even 5 meals out of it.Warning ..... I'm a peri-menopausal axe-wielding maniac0 -

Whatever you do, dont get one of the 4 wheeled shopping trollies... it amazing how much my mum gets in that thing...is like the tardis..and then she has been known to tie carriers on top:rotfl: :rotfl: .. i swear it must hold as much as the average car boot:D-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
I've just gone back to a basic 4 week plan. We have a roast on Sunday, either chicken, pork, beef or lamb and that sets up the next two to three days. I then filled in the blanks with other meals and that's it! We'll probably stick to it for about the next three months and then have a change. I just needed to have something written down to save me thinking for a while!Resolution:
